Harvested from a prime sauvignon vineyard in the warmer region of the Santa Ynez Valley, in the Happy Canyon of Santa Barbara AVA. Clone 1.
Winemaking
The grapes were picked in the early morning hours of September 17, 2018, immediately trucked to the winery and the still-cold berries were sent directly to the press. We cold settled the juice and racked it off to a stainless steel tank where we inoculated to begin fermentation. Once fermentation was complete, we racked half into neutral oak barrels and half into stainless steel barrels. The neutral oak treatment softens the wine and improves the mouthfeel of this varietal. The wine was filtered before bottling.
What’s it like?
The perfect glass for a summer afternoon. Full fruit sauvignon blanc, with tropical and citrus notes, refreshing on its own, and great with cheese or pasta prima vera.
