Picked on October 5, 2019 at full ripeness, this year’s cabernet was concentrated and produces intense flavors. With this vineyard, we use a yeast that produces smooth cherry and chocolate flavors as it converts the ripe, stores of sugar into the fully dry final wine. We take the sharper edges of the malic acid left after primary fermentation by sending the must through malolactic fermentation, and once fully dry, age the wine in French oak on its lees until racking before bottling.
What's It Like?
This is an intense, full bodied cabernet, a distinctly bigger style than the 2018. The primary palate is dark bing cherry and chocolate. It is a delicious wine.

Aged in mature French oak for 18 months.
